I was born in the wrong country

from the perfectionist, an account of 3-michelin-star chef Bernard Loiseau's tremendous rise and sudden, tragic fall in the world of nouvelle cuisine. Fernand Point, a forefather of that culinary movement, offered this beautiful mantra:

"Du beurre! Donnez-moi du beurre! Toujours du beurre!"

and what could be more appropriate to mark EV's 500th brilliant and profound missive than a celebration of butter?

Hey Simon. So a friend of mine just got a job waitressing at Lee's. Given that I wouldn't even have heard of Susur if it weren't for this blog, I immediately thought of you. She has absolutely no experience (apparently they like them that way) and is a little bit nervous about it. Do you have any pointers for her? I'm sure in exchange she could give you all kinds of interesting behind the scenes info about Susur, or even hook you guys up to be best friends or something.

does she have passion for service? or just passion for job? if she has passion for service, charlie trotter's "lessons in service" is a must-read.

1) I heard about this book and told someone to give it to you for Xmas.
2) I think that Susur has no idea about service and would never work for him.
3) always fill water glasses without being asked
4) ask the oldest lady first what she wants to eat

on hearing rumours that his restaurant might lose a michelin star, he commited suicide. to make matters worse, the rumours were untrue, and the restaurant held onto its three stars.
